It is so easy to make delicious pancakes without any flour. I like them for example with avocado pudding or grated pears (or apples) with cinnamon.
- 2 ripe plantains,
- 2 eggs,
- 100 ml coconut milk,
- 3 tsp coconut oil,
- 1 tsp salt,
- coconut oil for frying.
- peel plantains, cut to smaller peaces and blend well tohether with eggs, kokonut milk, kokonut oil and salt,
- put a little of coconut oil to a preheated pan and let it melt down,
- pour a thin layer of pancake dough,
- fry all pancakes on both sides, it is better to make them on moderate flame.
