Eskimo cake

Ingredients:

chocolate base:

  • 1 1/2 cup almond flour, 
  • 1/2 cup raw cocoa,
  • 1/2 cup coconut sugar,
  • pinch salt,
  • 2 eggs,
  • 1/4 cup coconut oil,
  • 1/3 cup coconut milk,

coconut layer:

  • 1 1/2 cup dried shredded unsweetened coconut, 
  • 1/3 cup almond flour,
  • 1/4 cup coconut oil,
  • 1/2 cup coconut milk,
  • 1 Tbsp honey,

chocolate topping.

Instructions:

chocolate base:

  1. preheat the oven to 170°C,
  2. mix dried ingredients (flour, cacao, sugar and salt) and separately those others,
  3. mix all together,
  4. cover the cake tin with the mass,
  5. bake for about 15 minut,
  6. let it cool,

coconut layer:

  1. mix all ingredients together,
  2. put it on the chocolate base,
  3. let it cool in freezer for 10 minutes,

chocolate topping:

  1. coat the cake with chocolate topping and let it cool in fridge.
