Carrot cake

My first paleo baking. :-) With my boyfriend we like this cake from the first time we made it. Now we make it to almost every our visitors who haven’t eaten anything else from our kitchen before. I highly recommend the carrot cake, also your nonpaleo friends will like ti. ;)

Ingredients:

  • 1 kg carrot,
  • 2 ripe plantains,
  • 1 cup dates,
  • 3 eggs,
  • 1 Tbsp coconut oil,
  • 1 Tbsp cinamon,
  • 2 tsp baking soda,
  • 1 tsp salt,
  • 1 cup walnuts, chopped.

Instructions:

  1. preheat the oven to 170°C,
  2. blend all together (except walnuts), I recommend put only half the ingredients to a blender for easier mixing,
  3. mix walnuts to the dough,
  4. bake until the dough stops to cling to a skewer.
