Baked aubergine

Servings: 6.

Ingredients:

  • 0,5 kg ground beef,
  • 0,5 kg ground pork,
  • 4 aubergines,
  • 5 bigger tomatoes,
  • 3 eggs,
  • 1 – 2 onions,
  • lard,
  • basil,
  • pepper,
  • salt.

Instructions:

  1. clean aubergines, cut stalks, cut in half, scrape out, sprinkle with salt and leave to sweat,
  2. fry chopped oninons on lard, add meat, chopped insides of aubergines and mixed of chopped tomatos,
  3. season with basil, salt and pepper and braise for a while,
  4. dry aubergines and fill with the mixture of meat,
  5. pour with beaten eggs and bake in preheated oven on 170°C for half hour.
